Start with a fresh piece of seasoned tuna. Give it a quick sear on high heat for no more than a minute on each side. Cut tuna into pieces. Cut up one avocado for every 10ozs of tuna. Add soy sauce, sesame oil, red pepper flakes, toasted sesame seeds, scallion, and cilantro. Allow to marinate for thirty minutes. Squeeze a lime over top and you're ready to rock. Can't beat fresh seafood!

Begin by drying and double checking your filet for any pin bones. Next mix salt and sugar in almost equal amounts, just a little extra sugar. Cover both sides of the filet completely. Wrap in plastic wrap, cutting a slit on one end allowing moisture to escape. Apply weight to aid the escape of any moisture or juices. Refrigerate and allow to cure for 48 hours. Slice thin and put over top of a fresh bagel with locally produced creamed cheese. A tasty and healthy way to start your day.

King crab is the epitome of seafood. Crack any claws or tough knuckles. Apply olive oil and fresh minced garlic over top and put into a preheated 380F degree oven. Cook until internal temperature reaches 143F. Clarified butter is nice but not needed, it is the crowned king for a reason.

Salt, pepper and garlic. 

Preheat grill or skillet to 400f

Three minutes each side. Finish with olive oil,  parsley, and a squeeze of lemon. Fresh seafood doesn't need much; keep it simple!

Scallops can be cooked in or out of their shells, keep it simple. 

A pinch of salt and a bit of pepper.

finish with olive oil and fresh garlic, garnish with parsley.

Baked at 400 for about 9 minutes. Finish with butter or olive oil and garnish with parsley.
